I've never dealt with Chinese characters before.
So, as a test, I've copied the Chinese character 李 (1) into a brand new "gvim" document (2).
If I view this document in its hexadecimal form (3), here is what I can read:
Can you explain to me what does this mean?
I know this question is vague... can you try to explain to me all the same?

(3) I use the "xxd" utility. I execute the ":%!xxd" command in "gvim".
